Crispy waffles à la Viivi Lehikoinen

Waffles. They are hurdler Viivi Lehikoinen’s favorite treat. In her family crispy waffles have been made using the same recipe for years, and the secret behind the waffles’ crispiness is sparkling water. The sparkling water makes the dough extra fluffy on the inside and the outside perfectly crispy.

Waffle fillings also don’t always have to be sweet. Go ahead and try some savoury toppings for a change. Viivi’s Sunday treat is served with delicious feta cream.

Ingredients

  • 8 dl wheat flour
  • 1 tablespoon of sugar
  • 3 teaspoons (1 tablespoon) baking powder
  • 1 tsp salt
  • 6 ½ dl milk
  • 3 eggs
  • 3 dl Mysoda sparkling water

Preparation

Mix the dry ingredients together in a bowl. Add milk and eggs. Let it sit for 10 min. Add the Mysoda sparkling water and mix. Make the waffles by putting about 1 dl of batter at a time on a greased waffle iron. Bake until golden brown.

Savoury Feta Cream

  • Crumbled feta
  • Turkish yogurt
  • A spoonful of honey
  • Lemon juice and zest
  • Chopped chives
  • Salt & pepper to taste

Mix all ingredients together in a bowl and add a spoonful to the waffles.

A slice of bacon, a poached egg or cold-smoked salmon also combine well with the feta paste. Add the toppings of your choice and the perfect weekend breakfast is served!
